Healthy Papaya, Tomato and Potato soup!
Now why would you make this soup I hear you ask? Well let me list the health benefits of each ingredient.
Papaya
- contains an enzyme called Papain, which helps to digest proteins.
Papaya contains high levels of vitamin C, A, E and K, as well as folate,
potassium and magnesium. They are high in anti-oxidants and can help
with cardiovascular health. As papaya's contain fiber, it can help lower
cholesterol levels too. It is this fiber as well that can help lower
your risk of getting colon cancer.
Tomato
- Now we all know tomatoes contain high levels of lycopene. Lycopene is
a powerful anti-oxidant that the body cannot produce by itself.
Tomatoes can help lower your risk getting various cancers as well as
improve cardiovascular health.
Potato
- Potatoes contain vitamin C, B6, tryptophan, potassium, manganese and
fiber. Potatoes also contain kukoamines, which is said to said lower
blood pressure. They also have phytonutrients, which have anti-oxidant
activity. Unfortunately, the best way to enjoy the health benefits of
potatoes is to boil or bake them. Greasy chips are out I'm afraid!
Now how did I make this soup? Well you will need:
- 4 tomatoes
- 200g potatoes
- 600g papaya
- 200g lean pork
- salt to taste
So
all I did was to first make sure to trim as much fat as possible off
the pork, then rinse it under water. Next pour boiled water over the
pork and rinse under the tap again. Chop the other ingredients into
chunks. It doesn't really matter what size, smaller chunks means more
mushy soup (like mine).
Bring some water to the boil (I used about
1L ) but you can add more if you prefer your soup more liquidy. Add in
all your ingredients, bring to the boil, then simmer over a low heat for
1-2hrs. Then add salt to taste. Simple! This recipe makes enough for
two people.
