Okonomiyaki Three2Tea edition

Okonomiyaki is a savoury japanese pancake, traditionally made with cabbage, flour, yam, eggs and water. This is then topped with japanese mayonnaise, okonomiyaki sauce and bonito flakes.

Here is Three2Tea's version:

Ingredients used:

  • Two medium sized carrots
  • One red onion
  • Half a cucumber
  • Half a red pepper
  • Red pepper flakes
  • Red pepper paste
  • One egg
  • Plain Flour, we used about 150g-200g
  • Water
  • Bonito flakes
  • Okonomiyaki sauce
  • Japanese mayonnaise
First, chop up your vegetables into bitesize pieces and fry off in a frying pan until cooked. Set them aside.

To make the batter, mix in your flour with the egg and add enough water to your liking. You want it to be thick enough to coat the vegetables and hold it together so less water is better than lots of water. It makes it easier to cook as well.

Three2Tea likes spicy food so we added a tablespoon of red pepper paste and and pinch of red pepper flakes into the batter.

Drop your vegetables into the batter and combine well.

Heat some oil in a frying pan and pour in your okonomiyaki mixture, press down to a flat 'pancake' shape. What I like to do is to turn the heat down low and cover the pan with a lid. Depending on the thickness of your okonomiyaki, it takes about 10-15 mins to cook on one side. After which, turn your okonomiyaki over to cook the other side. Once the okonomiyaki feels 'firm', it is ready to eat!

First, put some okonomiyaki sauce on top and spread with a spoon. Next squeeze some jappanese mayonnaise on top, in a criss-cross pattern. Then top with bonito flakes and enjoy!

This recipe feeds two small stomachs or one large stomach!
